Since founding Santaro Japanese Restaurant over ten years ago at Fort Canning Country club, and now Amara Hotel, Head Chef Li-San has been delighting many with his exquisite Japanese creations. With a flair for creating his own dishes, incumbent head Chef Li San continues to impress patrons with fresh and delightful delicacies with a taste to behold, of which have won the restaurant many acclaimed awards including:

Educated and taught by a Japanese master chef, Li- San has a flair in creating new dishes and using many different ingredients to form a brand new taste for his guests.
In August 2007, Chef Santaro was given the greatest honour of cooking for Minister Mentor Lee Kwan Yew, an active political leader who is fondly regarded as the father of Singapore.

All seafood, vegetables, fruits and seasonal items are imported directly from Tsukiji Fish Market, Tokyo, to ensure you get only the freshest and most authentic flavour.
